Fresh sweet pineapple combined with the zing of ginger is simply irresistible! Made without any added sweeteners these easy and healthy popsicles are perfectly refreshing on a hot summers day!
The Ingredients
Only 4 ingredients are needed for these popsicles:
- Pineapple. Fresh, sweet pineapple works best for this recipe.
- Orange juice. I like to use freshly squeezed orange juice but store bought can be substituted.
- Banana. Half a banana adds a bit of creaminess and sweetness without an overpowering banana flavor.
- Ginger. Fresh ginger is a must for this recipe! Start with a small one inch cube and add more to taste. I ended up using a 2 inch knob because I love a strong ginger kick.
- Edible flowers. I had to add a floral touch but it’s completely optional! I used dried pansy flowers since they are thin and easy to eat without any distinct flavor. I think that they add a fun and pretty touch!
How To Make The Popsicles
These popsicles can be whipped up in under 15 minutes!
- Add all of the ingredients to a blender and blend until smooth and creamy.
- Place the dried flowers face down into the molds, add the sticks and pour the mixture on top.
- Transfer to the freezer and give them at least 3-4 hours (or overnight) to freeze.
Variations
I’ve made these as popsicles, freezies, smoothies and smoothie bowls. They’re all equally delicious!
- Freezies: Follow the recipe the same but place them into freezie bags. They’re smaller and fun for kids!
- Smoothie: Replace the fresh pineapple and banana with frozen. This recipe makes 2 large smoothies.
- Smoothie bowl: Replace the fresh pineapple and banana with frozen and use only 1/2 cup of the orange juice. This works best in a food processor or high speed blender. It makes 2 smoothie bowls.
